Tips for the Best Betefour

  • For the most consistent results, always start with room temperature butter. It’s the secret to getting that perfect, smooth flow through your piping bag.
  • Once you’ve added the flour, be sure to mix only until just combined—overworking the dough will result in a tough cookie rather than a tender one.
  • If your kitchen is warm and the dough feels too soft, a quick 10-minute chill for the shaped cookie tray will help them maintain their beautiful detail in the oven.
  • Keep an eye on them as they bake, and pull them out as soon as they turn a light golden brown to ensure they stay moist and buttery.

How to store Egyptian Betefour Cookies

To keep your Betefour cookies fresh and delicious, store them in an airtight container at room temperature, plain (undecorated) for up to 3 months. Place parchment paper between layers to prevent sticking.

Store your chocolate or jam-decorated Betefour cookies in an airtight container and keep them in the refrigerator for up to two weeks. But allow them to come to room temperature before serving for the best texture and flavor.

These cookies also freeze well—store in a sealed container for up to 2 months and thaw at room temperature before enjoying.
