Egyptian Betefour Cookies

Ingredients
  

For Vanilla Betefour
  • 3 egg whites
  • 1 tsp vanilla extract
  • 2 cups unsalted butter - softened
  • 7 tbsp unsalted butter - softened
  • 1 1/2 cup powdered sugar
  • Pinch of salt
  • 4 3/4 cups all-purpose flour
For Chocolate Betefour
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp unsalted butter - softened
  • 2 tbsp oil
For decoration (optional)
  • Melted chocolate
  • Crushed pistachios
  • Jam (apricot or strawberry)

Method
 

Make Vanilla Dough
  1. Beat butter and powdered sugar until light and fluffy (about 5 minutes).
  2. Mix in egg whites and vanilla until smooth.
  3. Add salt and gradually add the flour to the butter mixture until a soft dough forms.
Make Chocolate Dough
  1. Transfer 1/2 vanilla dough to another bowl.
  2. Mix in cocoa powder, butter, and oil until smooth.
Shape Cookies
  1. Transfer dough into a cookie press or a piping bag with a star tip and pipe shapes onto a lined baking tray.
Bake
  1. Bake at 350°F (175°C) for 8–10 minutes or until edges are lightly golden.
Decorate
  1. Let them cool down for about 10 minutes.
  2. Dip in chocolate, add pistachios, or sandwich with jam.
