Authentic Egyptian Falafel Recipe (Crispy Ta’ameya at Home)

Falafel is also know as Ta’ameya in Egypt. Egyptian falafel is made with dried fava beans instead of chickpeas. This gives it a uniquely light texture and vibrant green center. We also add fresh parsley, cilantro, dill, garlic, onion, and warm spices to it. Each bite is bursting with herby goodness and deep, savory flavor.
What makes Egyptian falafel truly special is its contrast in texture. It is perfectly crispy and golden on the outside, soft and fluffy on the inside. Authentic Egyptian Falafel
Ingredients
Method
- Place the dried fava beans in a large bowl and cover with plenty of water.
- Soak for 8 hours or overnight.
- Drain and rinse well.
- Soak the pita bread in water for about 2 minutes. Drain and set aside.
- In a food processor, combine the soaked fava beans, onion, green onion, garlic, parsley, cilantro, and dill.
- Pulse until finely ground but not pureed. The mixture should resemble coarse sand.
- Pulse briefly to combine.
- Transfer to a bowl with a colander to drain any excess water. Then, cover and refrigerate for 30 minutes to firm up. Or transfer to Ziplock bags and freeze for later use.
- Stir in the baking powder just before frying.
- Shape the mixture into small patties or balls (about 2 tablespoons each).
- Sprinkle or press sesame seeds onto the outside.
