Method
Make the dough
- In a large bowl, combine flour, salt, yeast, and warm water.
- Mix until a soft dough forms.
- Cover and let it rest for 10-20 minutes.
- Sprinkle some flour and knead for 5 minutes by hand (or 3 minutes with a mixer) until smooth and elastic.
Shape the pitas
- Divide the dough into 8 equal pieces.
- Roll each piece into a ball, then flatten into circles about ¼ inch thick.
Cook
- Heat a griddle or cast-iron pan over medium-high heat.
- Cook each pita for about 1–2 minutes per side. They should puff up and develop golden brown spots.
