Prepare Middle Eastern Chicken Marinade
- In a large bowl, add the sliced onion, yogurt, white vinegar, salt, black pepper, garlic powder, coriander powder, paprika, and Middle Eastern chicken spices. Mix until well combined.

Add Chicken and Marinate
- Add the chicken thighs to the bowl.

- Toss everything together until the chicken is fully coated in the marinade.

- Cover the bowl and refrigerate for at least 4 hours, preferably overnight for the best flavor and tenderness.

Grill the Chicken
- Preheat your grill to medium heat and lightly oil the grates to prevent sticking.

- Place the chicken thighs skin-side down on the grill. Cook for about 6–8 minutes per side, turning occasionally, until the chicken develops a nice char and reaches an internal temperature of 165°F.

Rest and Garnish
- Let the grilled chicken rest for 5 minutes. Garnish with chopped parsley before serving.

Notes
- Marinating overnight gives the chicken a deeper flavor and extra tenderness.
- You can use boneless chicken thighs, but reduce the cooking time slightly.
- If the chicken starts browning too quickly, move it to indirect heat to finish cooking.
