Ingredients
Method
Cook Pasta
- Bring a large pot of generously salted water to a boil.
- Add the spaghetti and cook until it is just al dente—firm but tender.
- Before draining, reserve 1/2 cup of the starchy cooking water to save for your sauce, then strain the pasta and set it aside.
Cook Shrimp
- Heat olive oil and 2 tbsp butter in a large skillet over medium heat.
- Add the shrimp and season with salt and pepper.
- Cook the shrimp for 2 minutes per side.
- Remove the shrimp from the skillet and set aside.
Make Sauce
- Using the same skillet to capture all that flavor, toss in the garlic and red pepper flakes.
- Sauté for about a minute until the garlic is golden and fragrant, then deglaze the pan with the wine and lemon juice.
- Let the sauce simmer for another 2 minutes to allow the flavors to meld and reduce slightly.
Combine Pasta with Sauce and Shrimp
- Return the spaghetti and shrimp to the skillet along with the remaining butter.
- Toss everything together well to ensure the pasta is glossy and completely coated in the garlic butter sauce.
- If the sauce seems too thick, whisk in a tablespoon or two of your reserved pasta water to reach the perfect consistency.
- Finish the dish with a sprinkle of fresh parsley and a generous dusting of Parmesan before serving immediately.
