Ingredients
  

  • 1 lb large shrimp - peeled & deveined
  • 2 tbsp fresh parsley - chopped
  • 5 cloves garlic - minced
  • 3/4 cup white cooking wine - or chicken broth
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter
  • salt - to taste
  • black pepper - to taste
  • 1/4 tsp red pepper flakes - optional
  • 12 oz linguini or spaghetti - or your favorite pasta
  • 2 tbsp grated Parmesan cheese

Method
 

Cook Pasta
  1. Bring a large pot of generously salted water to a boil.
  2. Add the spaghetti and cook until it is just al dente—firm but tender.
  3. Before draining, reserve 1/2 cup of the starchy cooking water to save for your sauce, then strain the pasta and set it aside.
Cook Shrimp
  1. Heat olive oil and 2 tbsp butter in a large skillet over medium heat.
  2. Add the shrimp and season with salt and pepper.
  3. Cook the shrimp for 2 minutes per side.
  4. Remove the shrimp from the skillet and set aside.
Make Sauce
  1. Using the same skillet to capture all that flavor, toss in the garlic and red pepper flakes.
  2. Sauté for about a minute until the garlic is golden and fragrant, then deglaze the pan with the wine and lemon juice.
  3. Let the sauce simmer for another 2 minutes to allow the flavors to meld and reduce slightly.
Combine Pasta with Sauce and Shrimp
  1. Return the spaghetti and shrimp to the skillet along with the remaining butter.
  2. Toss everything together well to ensure the pasta is glossy and completely coated in the garlic butter sauce.
  3. If the sauce seems too thick, whisk in a tablespoon or two of your reserved pasta water to reach the perfect consistency.
  4. Finish the dish with a sprinkle of fresh parsley and a generous dusting of Parmesan before serving immediately.
