Egyptian Moussaka with Eggplant
Ingredients
Method
- Slice the eggplant into rounds.
- Sprinkle lightly with salt and let it sit for 15 minutes to remove bitterness.
- Pat dry with paper towels.
- Heat Avocado oil ( or Vegetable oil) in a skillet over medium heat.
- Fry eggplant slices until golden brown on both sides.
- Remove and place on paper towels to drain excess oil.
- Heat olive oil in a large pan over medium heat.
- Sauté the chopped onion for 3–4 minutes until softened.
- Add garlic and cook for 30 seconds.
- Add ground beef and cook until browned.
- Add tomato sauce and simmer for 10–15 minutes until slightly thickened
- Add Vinegar and simmer for 2 minutes
- In a baking dish or skillet, layer: fried eggplant, red peppers and meat sauce.
- Repeat layers until ingredients are used.
- Traditional stovetop method: Cover and simmer for 15 minutes.
- Oven method: Bake at 350°F for 15 minutes.
- Sprinkle with fresh parsley and serve hot.
